The basic recipe for "Nockerl", small typical Austrian dumplings. They can be served immediately as a side dish, or they can be processed further on to tasty vegetarian or hearty dishes. They can't be missed in the traditional Viennese cuisine.
(At this point, the team of euromeal would like to mention that the Austrian "Nockerl" could be translated to the english language with the word "dumplings". For you english-speaking-cooks, it's easier to pronounce. It's not the same, but quite the same and we hope you have smiled at this point. We thank you! =) )
instructions
Mixing butter with the milk
Fill a pot of two thirds with warm water, salt and bring it to a boil. Fill the butter with a mouthful of milk in a glass. Heat it in the microwave until the butter melts. Mix it with the eggs.
Preparing the dough
Put the flour into a bowl and season it with salt and pepper. Add the egg-mixture and process it to a dough quickly.
Forming the dumplings
Bring the water together wit some salt to a bowl. Dig out the dumplings using a spoon.
Boiling the dumplings
Put the dumplings in the boiling salt water. Stir gently so that the dumplings won't stick to the ground. Allow the water to boil slightly, but make sure that it won't get too hot. Vary with the temperature. The dumplings are done when they start floating on the surface.
